RECIPE:


INGREDIENTS:


1 C. canned pumpkin


1 egg


1/2 C. vegetable oil


1/2 C. sugar


1/2 C. brown sugar


1 Tbl. vanilla


2 C. flour


2 tsp. baking powder


1 1/2 tsp. cinnamon


1/2 tsp. salt


1 tsp. baking soda


1 tsp. milk


2 C. chocolate chips


 


INSTRUCTIONS:


1. Combine pumpkin, egg, oil, sugars, and vanilla in large bowl.


2. In a separate bowl, stir together flour, baking powder, cinnamon and salt.


3. Dissolve baking soda with the milk and stir into pumpkin mixture.


4. Add flour mixture to pumpkin mixture and mix well.


5. Add chocolate chips and stir until combined.


6. Line baking sheets with parchment paper. Drop cookies by spoonful about 2 inches apart. Bake at 350 degrees for 12-13 minutes, or until a toothpick comes out clean.


Makes about 3 1/2 dozen cookies


 NOTE:  Original recipe used 1 C. white sugar; I prefer a combination of white and brown sugars.
