I thought KAPOH\'s latest recipe card sounded yummy so gave it a try:


The Ingredients:


1 lb small new potatoes*     


1/2 C malt vinegar


1/2 T kosher salt


Water to cover potatoes


4 C cold water


4 Tbl salt


 2 C. ice


2 Tbl unsalted butter


1/2 tsp cracked pepper


1 Tbl chives


2 tsp malt vinegar


extra salt, vinegar, chives


* I used a combination of purple, red, and white potatoes.


The Instructions:


1. Combine potatoes, vinegar and salt in large saucepan over high heat.  Add water to cover potatoes. Bring to a boil; cover and simmer until potatoes are just tender (15-20 min.).


2. Preheat oven to 450 degrees. Line rimmed baking sheet with parchment paper.


3. Whisk cold water and salt to dissolve; add ice.


4. Transfer cooked potatoes to ice bath for 30 seconds; drain and pat dry.  Cool slightly.


5.  Melt butter, pepper, chives.  Whisk in vinegar.


6. Smash potatoes to 1/2 inch on baking sheet.


7. Brush both sides with butter mixture; sprinkle with salt.  Bake 30-40 mins until edges are crispy and golden. Brush with remaining butter mixture.  Sprinkle with extra salt, vinegar and chives.  Serve hot.   2 large servings
