This recipe is from the blog post for this week for "Loaded Cauliflower," but was tweaked, as noted.
The ingredients
1 lb cauliflower florettes
2 T water
3 T butter
4 oz sour cream
2 T snipped chives
1 cup grated cheddar cheese
salt and pepper to taste
2 slices cooked bacon, crumbled
The instructions
Cut cauliflower into bite-sized pieces and put in microwave safe bowl. Add 2 T of water, cover and microwave for 5-8 minutes until completely tender. Drain excess water and let sit uncovered for 1-2 minutes.
Put cauliflower into food processor and process until fluffy. Add butter and sour cream and process until it resembles the consistency of mashed potatoes.
Remove to a bowl and add most of the chives, saving some for topping later. Add half the cheddar cheese and mix by hand. Season with salt and pepper.
Top with the remaining cheese and chives. Add the bacon. Put back into the microwave or place under the broiler for a few minutes to melt the cheese.
