My sister and I worked together on altering the original "Tiramisu Truffles" recipe because I really can't stand even the SMELL of coffee. (The "Iced Coffee" recipe was DEFINITELY not in my wheelhouse.) We call it "Healthy" because we use DARK chocolate.  


JOURNALING:
8 oz creamed cheese, softened
3 C powdered sugar, sifted
3 C dark chocolate chips, melted
1 1/2 tsp. flavoring(s) (vanilla, raspberry, orange, lemon, almond, liquers, etc.)
Toppings: ground nuts, sprinkles, chopped pretzels, sea salt, cocoa powder, decorating sugar, etc.
In a large bowl, beat cheese with mixer until smooth. Gradually beat in sugar until well blended. Stir in melted chocolate. If using more than one flavoring, divide the mixture as needed. Add flavorings. Shape into 1 inch balls. (Can refrigerate up to about 15 minutes if necessary for handling.) Roll in toppings. Store in air tight container in refrigerator. Enjoy!
