On recipe card:
KRISTEN’S FAVORITE STOVE TOP MAC-&-CHEESE
8 oz (1/2 lb) elbow macaroni
4 Tbsp butter
2 eggs
6 oz whole milk
1 tsp kosher salt
1/4 tsp fresh black pepper
1/2 tsp hot sauce*
1/2 tsp yellow or Dijon mustard
10 oz grated cheese (I used Monterey Jack, Colby, Cheddar, Velveeta)
*I wasn\'t about to buy a bottle of hot sauce for just 1/2 tsp so I substituted 1/4 tsp cayenne pepper and a splash of apple cider vinegar.
Cook and drain pasta. Melt in the butter and toss to coat. In a separate bowl, mix together rest of ingredients except cheese. Add to pasta. Add cheese. Stir continuously over low heat 3-5 minutes until creamy.

Mac and cheese, hot dog, Coke, and chocolate. CLASSIC American comfort foods. Unfortunately, I found the mac/cheese recipe unsatisfying. It was too soupy for my tastes and the sauce “broke” when I tried to warm it up. I was brought up on the classic “blue box” of what I called “Kraft Dinner” and, now with the microwave version, it is so easy to make. Comfort in three and a half minutes. I mean, COME ON!!!!
